Wild Leek and Potato Soup
Potato Soup
 
Serves: 4
Ingredients
  • 2 T. butter
  • ⅓ c. chopped onion
  • 4 c. milk
  • 1 c. potato flakes
  • salt and pepper to taste
Instructions
  1. Place 2 Tablespoons butter in saucepan.
  2. Add ⅓ cup chopped onion (and celery if desired). Cook until soft.
  3. Add 4 cups milk. Use medium heat until milk is hot but not boiling.
  4. Turn off heat and stir in about one cup of potato flakes, or to desired consistency.
  5. Season with salt and pepper to taste.
