- 2 T. butter
- ⅓ c. chopped onion
- 4 c. milk
- 1 c. potato flakes
- salt and pepper to taste
- Place 2 Tablespoons butter in saucepan.
- Add ⅓ cup chopped onion (and celery if desired). Cook until soft.
- Add 4 cups milk. Use medium heat until milk is hot but not boiling.
- Turn off heat and stir in about one cup of potato flakes, or to desired consistency.
- Season with salt and pepper to taste.
