Pasta e Fagioli
  • 1 t. Western Family Olive Oil
  • 4 cloves garlic, finely minced
  • 1-1/4 c. onion, finely diced
  • 2 cans (14.5 oz.) Western Family Chicken Broth
  • 2 cans (15 oz.) Western Family Crushed Tomatoes in Puree
  • 1 can (15 oz.) Western Family Great Northern Beans, do not drain
  • ½ t. Western Family Black Pepper
  • ¼ c. chopped fresh parsley
  • 2 c. Western Family Rotini Pasta, uncooked
  1. Heat the olive oil in a large stock-pot.
  2. Add garlic and onions to oil and cook until onions are golden brown and tender.
  3. Add chicken broth, tomatoes, beans, pepper and parsley. Bring to a boil. Reduce heat and simmer, covered, for five minutes.
  4. Add rotini to the pot and simmer until pasta is tender, approximately 10 minutes.
  5. Serve immediately.
