  • 2 tablespoons Western Family Olive oil
  • 3 medium Carrots, chopped
  • 4 stalks Celery, chopped
  • 1 large Onion, chopped
  • 3 cloves Garlic, chopped
  • 3 medium Potatoes, diced
  • 1 (32-ounce) Western Family aseptic carton; divided Chicken Broth
  • 4 Italian Chicken Sausage, pre-cooked, diced
  • 2 (15-ounce) cans Western Family Great Northern Beans
  • 1 (15-ounce) can Western Family Dark Red Kidney Beans
  • 1 (14.5-ounce) can Western Family Diced Tomatoes
  • 1 (14.5- ounce) can Western Family Cut Green Beans
  • 2 teaspoons Italian Seasoning
  • 1 tablespoon Oregano
  • 2 teaspoons Western Family Ground Black Pepper
  • ½ cup Western Family Shredded Parmesan
  1. In a large pot, heat olive oil over medium heat; add carrots, celery, onion, garlic, and potatoes. Stir and cook for 3-5 minutes.
  2. Pour in 2 cups of chicken broth; simmer for 5-10 minutes.
  3. Add pre-cooked chicken sausage, great northern and kidney beans, tomatoes, green beans, and remaining 2 cups of chicken broth.
  4. Bring to simmer; add in spices. Ready to serve when potatoes are soft and soup is at desired temperature.
  5. Pour into serving bowls; top with shredded Parmesan cheese.
  1. Parmesan cheese adds a natural salty flavor instead of adding salt.
  2. Serve with warm biscuits or artisan bread.
