Hearty Chicken Soup

Hearty Chicken Soup
Serves: 6
  • 8 oz. Western Family Small Sea Shells (1/2 package)
  • 2 T. Western Family Extra Virgin Olive Oil
  • 2 c. chicken breast, chopped
  • 1 c. red bell pepper, chopped
  • 1 c. yellow onion, chopped
  • 4 garlic cloves, chopped
  • 6 c. Western Family Chicken Broth
  • 1-1/2 c. zucchini, chopped
  • 1 c. carrots, chopped
  • 1 T. Western Family Italian Seasoning
  • 1 t. fennel seeds
  • Western Family Salt and Pepper to taste
  • 1 c. Western Family Grated Parmesan Cheese
  1. Prepare shells according to package directions. Drain and set aside.
  2. In a large saucepan, heat olive oil and sauté chicken until thoroughly cooked. Remove chicken and set aside.
  3. Add red pepper, onion and garlic and sauté until tender.
  4. Add broth and bring to a simmer.
  5. Add the zucchini, carrots, Italian seasoning, fennel seeds and chicken and simmer until carrots are slightly tender.
  6. Add cooked sea shell pasta.
  7. Season to taste with salt and pepper.
  8. Ladle soup into bowls and sprinkle with grated Parmesan cheese.
