Creamy White Bean Chicken Chili

Creamy White Bean Chicken Chili
  • ¼ c. Western Family Corn Oil
  • 1-1/2 c. onion, chopped
  • 6 garlic cloves, minced
  • 1 T. ground cumin
  • 2 t. dried oregano
  • ½ t. crushed red pepper flakes
  • 1 lb. boneless, skinless chicken thighs, cut into 1in cubes
  • 3 (15 oz.) cans Western Family Great Northern Beans, with juice
  • 1 c. Western Family Chicken Broth
  • 2 (7 oz.) cans Western Family Diced Green Chiles, drained
  • ¾ c. Western Family Sour Cream
  • ½ c. green onion, sliced
  • ¼ c. cilantro, chopped
  • salt and pepper
  • Western Family Hot Sauce or Jalapenos to taste
  1. Heat oil over medium/high heat in large stockpot.
  2. Add onion, garlic, cumin, oregano and red pepper flakes. Saute until onion is tender.
  3. Add chicken to stockpot and sauté until browned.
  4. Add beans, broth, green chiles and sour cream. Simmer until chicken is cooked through.
  5. Stir in sour cream, green onion and cilantro.
  6. Season to taste with salt and pepper, hot sauce and/or jalapeño peppers.
