Classic Minestrone Soup

Classic Minestrone Soup
  • 3 t. Western Family Olive Oil
  • 3 cloves garlic, minced
  • ½ c. onion, diced
  • 1 c. carrot, diced
  • ½ c. potatoes, diced
  • 1 c. zucchini, diced
  • 1 can (14.5 oz.) Western Family Whole Peeled Tomatoes
  • 2 cans (15 oz.) Western Family Chicken Broth
  • 1-1/2 c. chopped fresh spinach leaves
  • Western Family Grated Parmesan Cheese
  1. Heat olive oil in large saucepan. Add garlic, onion, carrots and potatoes and sauté until light brown.
  2. Add tomatoes and broth and simmer until vegetables are tender, break up tomatoes with spoon.
  3. Add zucchini and simmer for five minutes.
  4. Add spinach and simmer until slightly wilted.
  5. Serve in soup bowls with grated Parmesan cheese on top.
