Black Bean and Brown Rice Soup

Black Bean and Brown Rice Soup
  • 1 can (15 oz.) Western Family Black Beans, undrained, divided
  • 1 c. water
  • ⅓ c. onions, chopped
  • ¼ c. Western Family Italian Salad Dressing
  • ¾ c. Western Family Instant Brown Rice
  • Fresh cilantro and Western Family Sour Cream for garnish
  1. Place ¾ of can of beans into blender and puree until smooth. Pour into saucepan.
  2. Add remaining beans, water, onion, salad dressing and brown rice and stir to blend.
  3. Bring to a boil, cover, reduce heat and simmer for 10 minutes or until rice is tender.
  4. Garnish with cilantro and a dollop of sour cream.
