- 1 t. Western Family Extra Virgin Olive Oil
- 1-1/2 c. chopped onion
- 2 (4 oz.) cans Western Family Sliced Mushrooms, drained
- 2 c. Fat Free Chicken Broth
- ½ c. Western Family Sliced Almonds, toasted
- 1 c. Western Family Long Grain Rice
- 2 T. minced Italian parsley
- Saute onion in oil until tender.
- Add mushrooms, broth and rice and bring to a boil.
- Cover and simmer for 20 minutes.
- Stir in almonds and parsley.
- Season to taste with salt and pepper.
