  • 4 lbs. baby red potatoes
  • 4 carrots, peeled and cut into 2in chunks
  • 1 onion, peeled, quartered and cut into 1in slices
  • 6 garlic cloves, peeled
  • ⅓ c. Western Family Extra Virgin Olive Oil
  • 1 pkg. Western Family Onion Soup Mix
  1. Preheat oven to 450°F.
  2. Combine all ingredients in a large bowl; toss to coat vegetables with oil and soup mix evenly.
  3. Arrange vegetables on a parchment paper lined cookie sheet.
  4. Bake for 40 to 50 minutes or until potatoes and carrots are tender. Serve immediately.
