Ultimate Northwest Salad

Ultimate Northwest Salad
Serves: 6
  • ¼ c. onion, finely diced
  • 3 T. Western Family Apple Cider Vinegar
  • 3 T. Western Family White Wine Vinegar
  • ¼ t. paprika
  • 2 T. Western Family Granulated Sugar
  • ⅓ c. Western Family Extra Virgin Olive Oil
  • 2 T. Western Family Unsalted Butter
  • ¾ c. Western Family Walnut Halves & Pieces
  • 1 T. Western Family Granulated Sugar
  • 1 lb. Mixed Greens, ready to serve
  • 2 Fuji apples, quartered, cored and thinly sliced
  • ½ c. dried cranberries
  • ½ c. Goat cheese, crumbled
  1. Combine onion, vinegars, paprika and 2 tablespoons sugar in a bowl. Wisk in olive oil and season with salt and pepper.
  2. In a heavy skillet, melt butter. Add walnuts and stir until walnuts begin to turn light golden brown.
  3. Sprinkle 1 tablespoon of sugar over the walnuts and stir until sugar melts and begins to turn golden brown. Transfer walnuts to separate bowl to cool.
  4. In a large shallow bowl, combine the mixed greens and apple slices.
  5. Toss greens with salad dressing and sprinkle cranberries, goat cheese and walnuts over the top.
  6. Serve immediately.
