Tropical Prawn Salad
Serves: 8
  • ½ lb. Western Family Prawns, cooked and chilled
  • 6 slices Western Family Bacon, cooked crisp & crumbled
  • 6 c. red leaf or Romaine lettuce, chopped
  • 1-1/2 c. frozen pineapple chunks, thawed
  • ½ c. Western Family Diced Macadamia Nuts, toasted
  • ⅓ c. green onions, chopped
  • ½ c. Western Family Shredded Coconut, toasted
  • ⅓ c. Western Family Pineapple Juice
  • 5 T. Western Family Red Wine Vinegar
  • ⅓ c. Western Family Extra Virgin Olive Oil
  • Western Family Salt & Pepper to taste
  1. In a large salad bowl, combine prawns, bacon, lettuce, pineapple, nuts, onions and coconut.
  2. In a separate bowl combine ingredients for dressing and mix well.
  3. Pour dressing over salad and toss to coat. Serve Immediately.
