Shrimp Garden Pasta Salad
Serves: 8
  • 1 lb. large shrimp, cooked, peeled and deveined
  • 8 oz. Western Family Rotelle (1/2 package)
  • ⅔ c. green onions, sliced thin
  • 1 c. green bell pepper, chopped
  • 3 tomatoes, seeded and chopped
  • 1 jalapeno pepper, seeded and finely minced
  • ¼ c. Western Family Extra Virgin Olive Oil
  • 1 T. Western Family Minced Garlic
  • ¼ c. lime juice
  • ⅔ c. Western Family Tomato Juice
  • Western Family Salt and Pepper to taste
  1. Cook rotelle according to package directions. Rinse with cold water and drain.
  2. Combine all ingredients in large bowl and toss well. Season to taste with salt and pepper.
  3. Refrigerate for one hour prior to serving.
