Scalloped Potato Salad
  • 1 pkg. Western Family Scalloped Potatoes with Sauce Mix
  • 3-1/2 c. water
  • 1-1/2 T. Western Family Salad Oil
  • 2 T. Western Family Vinegar
  • ¼ c. Western Family Mayonnaise
  • 1 t. Western Family Prepared Mustard
  • ½ c. chopped celery
  • 2 hard-boiled eggs, chopped
  1. In saucepan, bring potato slices and 3 cups of water to a boil; simmer 15 minutes or until tender. Rinse with cold water; drain and chill.
  2. Blend cream sauce mix and oil in saucepan; add ½ cup water and vinegar. Bring to a boil, stirring constantly. Remove from heat, cover and chill.
  3. Add mayonnaise and mustard to chilled sauce; stir to blend.
  4. Combine potatoes, celery and egg; pour sauce over potato mixture; mix gently and serve.
