Red Beans and Rice Salad

Red Beans and Rice Salad
  • 2 c. water
  • 2 t. Western Family Dried Thyme
  • 1 c. Western Family Long Grain White Rice
  • 1 t. Western Family Cayenne Pepper
  • 2 cans (15 oz.) Western Family Canned Kidney Beans, drained and rinsed
  • 1 c. Green bell pepper, finely diced
  • 2 cans (14.5 oz.) Western Family Petite Diced Tomatoes with Green Chiles, drained
  • 1 c. red onion, finely diced
  • ½ c. Western Family Italian Salad Dressing
  1. In a heavy saucepan, add water, rice, thyme and cayenne pepper. Bring to a boil.
  2. Cover and reduce heat to low. Cook for 20 minutes or until rice is tender.
  3. In a large bowl, combine rice, beans, bell peppers, tomatoes and red onion.
  4. Pour salad dressing over the rice mixture, stir gently and serve warm or cold.
