Greek Pasta Salad

Greek Pasta Salad
Serves: 4
  • 8 oz. Western Family Acine di Pepe
  • 1 T. Western Family Extra Virgin Olive Oil
  • 2 T. Western Family Butter
  • 2 T. Western Family Minced Garlic
  • 5 oz. Kalamata olives, pitted and halved
  • 1 c. tomatoes, chopped
  • 4 oz. Western Family Feta Cheese, crumbled
  • 1 c. basil, sliced thin
  • ½ c. cucumber, peeled and chopped
  1. Prepare Acine di Pepe according to package directions.
  2. In a heavy skillet over medium heat, heat oil and butter until butter no longer foams.
  3. Add garlic and sauté until golden brown.
  4. Add olives and tomatoes.
  5. In large bowl combine acine di pepe with olive mixture. Add feta, basil and cucumbers.
  6. Toss and season to taste with salt and pepper.
