Greek Pasta Salad
Serves: 4
Ingredients
- 8 oz. Western Family Acine di Pepe
- 1 T. Western Family Extra Virgin Olive Oil
- 2 T. Western Family Butter
- 2 T. Western Family Minced Garlic
- 5 oz. Kalamata olives, pitted and halved
- 1 c. tomatoes, chopped
- 4 oz. Western Family Feta Cheese, crumbled
- 1 c. basil, sliced thin
- ½ c. cucumber, peeled and chopped
Instructions
- Prepare Acine di Pepe according to package directions.
- In a heavy skillet over medium heat, heat oil and butter until butter no longer foams.
- Add garlic and sauté until golden brown.
- Add olives and tomatoes.
- In large bowl combine acine di pepe with olive mixture. Add feta, basil and cucumbers.
- Toss and season to taste with salt and pepper.
