Creamy Chicken & Vegetable Spaghetti
Serves: 6
  • 14.5 oz. Western Family Multigrain Spaghetti
  • 2 Tbsp. Western Family Extra Virgin Olive Oil
  • 2 lbs Western Family Boneless, Skinless Chicken Breasts, chopped into 1inch cubes
  • 1 cup onion, cut into ¼ inch strips
  • 1 cup yellow bell pepper, cut into ¼ inch strips
  • 1 cup red bell pepper, cut into ¼ inch strips
  • 2 Tbsp. garlic, minced
  • 2 cups Western Family Heavy Whipping Cream
  • ½ cup Western Family Parmesan Cheese, shredded
  • Salt and Pepper to taste
  • 2 Tbsp. chives, chopped
  1. Prepare pasta according to package instructions.
  2. Heat oil in large skillet over medium-high heat.
  3. Add the chicken and cook until cooked through, remove from skillet and set aside.
  4. Add the onion and peppers to the skillet and sauté for 4 to 5 minutes or until onions are translucent.
  5. Add the garlic to the skillet and continue cooking for 20 seconds; remove from skillet and set aside.
  6. Add the heavy whipping cream to the skillet and simmer for 5 minutes or until slightly thick. Stir in Parmesan cheese.
  7. In a large bowl, combine cream, onion mixture, chicken and pasta. Toss and season with salt and pepper to taste.
  8. Top with chives and serve.
