Peanutty Corn Brittle
 
Ingredients
  • 1 c. Western Family Packed Brown Sugar
  • ¼ c. Western Family Margarine or Butter
  • ¼ c. Western Family Light Corn Syrup
  • 1 c. Western Family Peanuts
  • 1 t. Western Family Vanilla Extract
  • 4 c. Western Family Frosted Flakes Cereal
Instructions
  1. Preheat oven to 300°F.
  2. Combine sugar, margarine and corn syrup in saucepan. Cook over medium heat until mixture comes to boil, stirring frequently. Reduce heat and cook 4 minutes, stirring frequently.
  3. Remove from heat; stir in vanilla.
  4. Gradually add cereal, stirring until all pieces are evenly coated.
  5. Spread in ungreased 15 x 10 x 1-inch baking pan.
  6. Bake 20 to 25 minutes, stirring every 10 minutes.
  7. Spread on waxed paper to cool. Break into pieces.
  8. Store in airtight container.
  9. Microwave Directions: Combine sugar, margarine and corn syrup in microwave-safe bowl.
  10. Microwave on HIGH 3 minutes, stirring every minute. Stir in peanuts; microwave on HIGH 30 seconds*.
  11. Stir in vanilla. Gradually add cereal, stirring until all pieces are evenly coated.
  12. Microwave on HIGH 4 minutes, stirring every 30 seconds.
  13. Spread on waxed paper to cool.
  14. Break into pieces.
  15. Store in airtight container.

*Due to difference in microwave ovens, cooking time is approximate.
