Mixed Berry Shortcakes
 
Serves: 6
Ingredients
  • 2 c. Western Family Flour
  • 2 t. Western Family Baking Powder
  • ½ t. Western Family Salt
  • ⅓ c. Western Family Sugar
  • 1 t. lemon zest
  • 1-1/3 c. Western Family Whipping Cream
  • 2 T. Western Family Lemon Juice
  • ½ c. Western Family Strawberry or Raspberry Jam
  • 2 T. water
  • 3 T. Western Family Sugar
  • 2 T. Western Family Lemon Juice
  • 5 c. Western Family Frozen Triple Berry Blend
  • 2 c. Western Family Whipping Cream
  • 4 T. Western Family Sugar
  • 2 T. Western Family Lemon Juice
Instructions
  1. Preheat oven to 400°F.
  2. Combine flour, baking powder, salt, sugar, lemon zest in large bowl.
  3. Add cream and lemon juice and mix until just combined.
  4. Form into six equal sized mounds on an ungreased baking sheet. Sprinkle 1 t. of sugar over tops.
  5. Bake until golden brown, 25-30 minutes. Cool.
  6. In saucepan combine jam, water, sugar and lemon juice. Heat until jam melts and sugar dissolves.
  7. Fold in fruit and set aside.
  8. Whip cream, sugar and lemon juice until cream has firm peaks.
  9. Using a serrated knife cut biscuits in half.
  10. Place bottom halves of biscuits on individual serving plates, top with cream and spoon berries over the top.
  11. Place biscuit tops on top of berries.
  12. Serve immediately. Makes six.
