Mint & Chocolate Ganache Layered Brownies

Ingredients
  • 1 box Western Family Dark Chocolate Brownie Mix
  • 2 Western Family Eggs
  • ½ c. Western Family Oil
  • ¼ c. water
  • ½ c. Western Family Whipping Cream
  • 10 oz. white chocolate chips
  • 1-1/2 t. peppermint extract
  • 3 drops green food coloring
  • 1 c. Western Family Whipping Cream
  • 11 oz. semisweet chocolate, chopped
Instructions
  1. Prepare brownie mix according to package instructions in a parchment paper-lined 13" x 9" baking dish. Cool completely.
  2. In a small heavy saucepan, bring 1 cup of whipping cream to a simmer. Pour heated cream over white chocolate chips and allow to stand for one minute.
  3. Add extract and food coloring, and stir until smooth.
  4. Pour whipping cream mixture over cooled brownies and refrigerate for 30 minutes or until set up.
  5. In small heavy saucepan, bring 1 cup of whipping cream to a simmer. Pour cream over semisweet chocolate and allow to stand for one minute. Spread chocolate ganache over mint layer and refrigerate for a minimum of 1 hour so that it all sets up.
  6. Cut into small squares (should make a minimum of 30 brownies).
  7. Store covered between layers of waxed paper in the refrigerator.
