Ice Cream Crunchballs
Serves: 16
  • 2 c. Western Family Oats & More Cereal with Almonds, crushed to 1 c.
  • ¼ c. Western Family Peanut Butter
  • 1 T. Western Family Sugar
  • ¼ t. Western Family Ground Cinnamon
  • 1 quart Western Family Chocolate or Vanilla Low-Fat Ice Cream
  • Hot fudge ice cream topping (optional)
  1. Combine cereal, peanut butter, sugar and cinnamon; mix well.
  2. Scoop ice cream with ice cream scoop or shape into 1-1/2 inch balls.
  3. Roll balls in cereal mixture; place on wax paper lined baking sheets.
  4. Freeze until firm.
  5. Serve with hot fudge topping.
  6. Store covered in freezer.
Apple Crunchballs: Use vanilla ice cream. Top with warm chunky applesauce or apple pie filling. Strawberry Crunchballs: Use strawberry ice cream. Tope with strawberry ice cream topping and serve with fresh strawberries.
