Breakfast in Bed Red Velvet Hotcakes

Serves: 15 pancakes
  • Pancakes:
  • 2 large Eggs
  • 1 ¼ cup Buttermilk
  • 1 teaspoon Western Family Vanilla extract
  • 2 cups Western FamilyRed Velvet cake mix
  • Icing:
  • 4 ounces Western Family Cream cheese, softened
  • 1 cup Western Family Powdered sugar
  • 2 tablespoons Milk
  • Fresh raspberries, for garnish
  • Fresh mint, for garnish
  1. Heat an electric griddle to 300°F or a stove top frying pan on medium heat. Spray lightly with non-stick cooking spray.
  2. In a large bowl, combine eggs, buttermilk and vanilla extract.
  3. Add in cake mix. Using a whisk or an electric mixer, mix until smooth, about 2-3 minutes. Set aside.
  4. To make the icing, mix together cream cheese, powdered sugar and milk in a small bowl. Set aside.
  5. Using a small ladle or measuring cup, pour the pancake batter onto the heated griddle, about ¼ cup at a time.
  6. When small bubbles start to form on the top of the pancake, about two minutes, flip and cook for an additional two minutes. Pancakes should be lightly browned on both sides.
  7. Continue this process with remaining batter. Top pancakes with icing and raspberries, garnish with mint.
