Blueberry Studded Bundt Cake

  • 2 c. Western Family Flour
  • 1 t. Western Family Baking Powder
  • 1 t. Western Family Salt
  • 1-2/3 c. Western Family Sugar
  • ¾ c. Western Family Unsalted Butter
  • 3 Western Family Eggs
  • 2 t. lemon zest
  • 2 t. Western Family Vanilla Extract
  • ¾ c. buttermilk
  • 2-1/2 c. Western Family Frozen Blueberries
  1. Preheat oven to 350°F. Generously grease and flour a 12 cup bundt pan.
  2. In medium bowl combine flour, baking powder, salt and sugar, set aside.
  3. Using a mixer, beat sugar and butter until fluffy.
  4. Add eggs and beat until combined. Add lemon zest and vanilla.
  5. Alternately add flour mixture and buttermilk, beginning and ending with the flour mixture.
  6. Fold in the blueberries.
  7. Pour batter into bundt pan and bake until tester inserted in cake comes out clean, 60-70 minutes.
  8. Cool in pan for 15 minutes and turn cake out and cool completely. Sprinkle with powdered sugar and serve.
