Blueberry Buttermilk Muffins

Blueberry Buttermilk Muffins
 
Serves: 12 Muffins
Ingredients
  • 2 c. all purpose flour
  • 1 T. baking powder
  • ½ t. salt
  • ½ t. cinnamon
  • ¼ t. nutmeg
  • 2 large eggs
  • 1 c. buttermilk
  • ¾ c. sugar + extra for topping
  • ½ c. vegetable Oil
  • 1-1/2 t. vanilla
  • 1-3/4 c. Western Family Frozen Blueberries
Instructions
  1. Preheat oven to 400°F
  2. Grease a standard 12-cup muffin tin or line with paper cups.
  3. In a large bowl, combine flour, baking powder, salt, cinnamon and nutmeg.
  4. In a small bowl, mix well, eggs, buttermilk, sugar, oil and vanilla.
  5. Pour into the flour mixture and mix until moistened. Do not over mix.
  6. Fold in frozen blueberries.
  7. Fill muffin cups equally with batter. Sprinkle liberally with sugar.
  8. Bake for 15-20 minutes or until toothpick inserted into middle of muffin comes out clean. Serve warm.
