Pork Sausage Stuffed Mushrooms

Serves: 35-40 pieces
  • 8 ounces Ground pork sausage
  • 3 cups Western Family Corn Squares cereal
  • 35-40 Button mushrooms
  • 1 stalk Celery, chopped
  • ½ medium Onion, chopped
  • 2 tablespoons Western Family Olive oil
  • 1 teaspoon Western Family Garlic powder
  • ½ teaspoon Western Family Ground black pepper
  • 1 teaspoon Western Family Paprika
  • ? cup Western Family Beef broth
  • 4 oz Western Family Cream cheese, softened
  • 1 tablespoon Fresh parsley, minced
  • ½ cup Western Family Unsalted butter
  • 2 cloves Garlic, coarsely chopped
  • ¼ cup Shredded Parmesan cheese
  1. Heat oven to 400°F.
  2. In a large skillet, brown and crumble sausage; drain fat and set aside on a paper towel-lined plate to drain.
  3. Put cereal in a food processor and blend until pieces are very small, like corn meal. Pour into a small bowl and set aside.
  4. Remove stems from mushrooms. Set mushroom caps aside.
  5. Blend mushroom stems, celery and onion in a food processor until pieces are minced.
  6. Heat olive oil in skillet on medium-high heat. Sauté vegetable mixture for four minutes.
  7. Stir in garlic powder, black pepper, paprika and beef broth. Simmer for one minute.
  8. Remove skillet from heat and mix in cream cheese. Stir until melted.
  9. Add crushed cereal, parsley and cooked sausage. Mix well.
  10. In a small bowl, heat butter and garlic cloves in the microwave on high for 45 seconds, or until the butter is melted.
  11. Dip mushroom caps in melted butter mixture and arrange tops down in a 9” x 13” baking dish.
  12. Stuff caps with filling and top with shredded Parmesan cheese.
  13. Bake for 20 minutes or until cheese is melted.
  14. Serve hot.
