Pork Sausage Stuffed Mushrooms

Ingredients
- 8 ounces Ground pork sausage
- 3 cups Western Family Corn Squares cereal
- 35-40 Button mushrooms
- 1 stalk Celery, chopped
- ½ medium Onion, chopped
- 2 tablespoons Western Family Olive oil
- 1 teaspoon Western Family Garlic powder
- ½ teaspoon Western Family Ground black pepper
- 1 teaspoon Western Family Paprika
- ? cup Western Family Beef broth
- 4 oz Western Family Cream cheese, softened
- 1 tablespoon Fresh parsley, minced
- ½ cup Western Family Unsalted butter
- 2 cloves Garlic, coarsely chopped
- ¼ cup Shredded Parmesan cheese
Instructions
- Heat oven to 400°F.
- In a large skillet, brown and crumble sausage; drain fat and set aside on a paper towel-lined plate to drain.
- Put cereal in a food processor and blend until pieces are very small, like corn meal. Pour into a small bowl and set aside.
- Remove stems from mushrooms. Set mushroom caps aside.
- Blend mushroom stems, celery and onion in a food processor until pieces are minced.
- Heat olive oil in skillet on medium-high heat. Sauté vegetable mixture for four minutes.
- Stir in garlic powder, black pepper, paprika and beef broth. Simmer for one minute.
- Remove skillet from heat and mix in cream cheese. Stir until melted.
- Add crushed cereal, parsley and cooked sausage. Mix well.
- In a small bowl, heat butter and garlic cloves in the microwave on high for 45 seconds, or until the butter is melted.
- Dip mushroom caps in melted butter mixture and arrange tops down in a 9” x 13” baking dish.
- Stuff caps with filling and top with shredded Parmesan cheese.
- Bake for 20 minutes or until cheese is melted.
- Serve hot.
