Mushroom Walnut Spread
Serves: makes 4 cups
  • 1 c. Western Family Walnut Chips
  • ½ c. Western Family Vegetable Oil (divided)
  • 1 medium onion, chopped
  • 1 medium carrot, peeled and shredded
  • 1-1/2 lbs. white mushrooms, finely chopped
  • 1-1/2 T. Western Family Creamy Peanut Butter
  • 3 T. Western Family Chicken Broth
  • 2 T. Western Family Soy Sauce
  • ¼ t. allspice
  • pinch nutmeg
  • salt and pepper to taste
  1. Preheat oven to 350°F.
  2. Spread walnuts in a single layer on a cookie sheet and toast (about 8 minutes).
  3. Sauté onion in ¼ cup vegetable oil over medium heat, until soft.
  4. Add carrot to pan and sauté until soft.
  5. Put onion and carrot mixture into food processor.
  6. Return pan to heat and add remaining ¼ cup of oil. When oil is hot, add mushrooms and sauté until they are very soft – about 15 minutes.
  7. Add mushrooms to onion mixture in the food processor.
  8. Add walnuts and remaining ingredients. Puree until smooth.
  9. Season to taste with salt and pepper.
  10. Transfer to a serving dish and refrigerate for three hours.
  11. Serve with Western Family Roasted Vegetable Snack Crackers.
