Mushroom Walnut Spread
Serves: makes 4 cups
Ingredients
- 1 c. Western Family Walnut Chips
- ½ c. Western Family Vegetable Oil (divided)
- 1 medium onion, chopped
- 1 medium carrot, peeled and shredded
- 1-1/2 lbs. white mushrooms, finely chopped
- 1-1/2 T. Western Family Creamy Peanut Butter
- 3 T. Western Family Chicken Broth
- 2 T. Western Family Soy Sauce
- ¼ t. allspice
- pinch nutmeg
- salt and pepper to taste
Instructions
- Preheat oven to 350°F.
- Spread walnuts in a single layer on a cookie sheet and toast (about 8 minutes).
- Sauté onion in ¼ cup vegetable oil over medium heat, until soft.
- Add carrot to pan and sauté until soft.
- Put onion and carrot mixture into food processor.
- Return pan to heat and add remaining ¼ cup of oil. When oil is hot, add mushrooms and sauté until they are very soft – about 15 minutes.
- Add mushrooms to onion mixture in the food processor.
- Add walnuts and remaining ingredients. Puree until smooth.
- Season to taste with salt and pepper.
- Transfer to a serving dish and refrigerate for three hours.
- Serve with Western Family Roasted Vegetable Snack Crackers.
