Caramel Corn with Almonds

Caramel Corn with Almonds
Serves: makes 18 cups
  • 20 c. Western Family Popcorn, popped
  • 1½ c. Western Family Whole Almonds
  • 2 c. Western Family Brown Sugar
  • 1 c. Western Family Butter
  • ½ c. Western Family Light Corn Syrup
  • 1 t. Western Family Baking Soda
  1. Preheat the oven to 250°F.
  2. In a heavy, deep, and ovenproof stockpot combine brown sugar, butter and corn syrup.
  3. Bring to a boil, stirring constantly; allow mixture to boil for five minutes.
  4. Remove pot from heat and stir in baking soda.
  5. Quickly mix popcorn into sugar mixture and mix until popcorn is coated.
  6. Place pot into the 250°F oven and stir popcorn every fifteen minutes.
  7. Remove popcorn from oven after one hour–it should be crunchy.
  8. Pour popcorn onto sheets of tin foil and allow to cool. Makes approximately 18 cups of caramel popcorn.
