Instant Rice Pudding
- 1 c. @@brand@@ Instant Rice
- 2-1/2 c. @@brand@@ 2% Milk (divided)
- ¼ t. @@brand@@ Salt
- ½ c. @@brand@@ Sugar
- ¼ c. @@brand@@ Raisins (optional)
- 2 @@brand@@ Eggs, slightly beaten
- ½ t. @@brand@@ Vanilla Extract
- ½ t. @@brand@@ Ground Cinnamon
- In a medium saucepan, combine rice, two cups of milk, salt, sugar and raisins.
- Bring to a rolling boil, stirring constantly.
- Reduce heat and simmer for 10 minutes, stirring occasionally.
- Mix eggs with remaining ½ cup of milk in a separate container.
- Slowly add egg mixture to hot milk mixture, stirring vigorously with a fork.
- Cook over medium heat until thickened.
- Add vanilla and cinnamon.
- Cool for ten minutes and serve warm.
