Irish Tea Bread
- 2 lbs. @@brand@@ Raisins
- 1 lb. @@brand@@ Brown Sugar*
- 2-1/2 c. cold tea
- 2 eggs, slightly beaten (or equivalent egg substitute)
- 4 c. self-rising flour
- 1 t. nutmeg
- 1 t. @@brand@@ Cinnamon
- Preheat oven to 325°F
- In a large bowl, combine raisins, brown sugar and tea and allow to sit for 8 hours or overnight.
- Stir in eggs, flour and spices just to combine.
- Bake in two greased loaf pans for 1-1/2 hours.
- Allow to cool slightly before slicing.
*Sugar may be reduced to ¾ lb if desired. TIP: This bread freezes well
