Irish Tea Bread
Serves: makes two loaves
  • 2 lbs. @@brand@@ Raisins
  • 1 lb. @@brand@@ Brown Sugar*
  • 2-1/2 c. cold tea
  • 2 eggs, slightly beaten (or equivalent egg substitute)
  • 4 c. self-rising flour
  • 1 t. nutmeg
  • 1 t. @@brand@@ Cinnamon
  1. Preheat oven to 325°F
  2. In a large bowl, combine raisins, brown sugar and tea and allow to sit for 8 hours or overnight.
  3. Stir in eggs, flour and spices just to combine.
  4. Bake in two greased loaf pans for 1-1/2 hours.
  5. Allow to cool slightly before slicing.
*Sugar may be reduced to ¾ lb if desired. TIP: This bread freezes well
