Family Style Apple Pancake
- 4 T. unsalted butter, melted, divided
- 1-1/2 c. sweet baking apple (peeled, cored, and sliced ¼ " thick)
- 2-1/2 T. non fat dried milk
- 2 large eggs
- 6 T. water
- ½ c. flour
- 1 t. cinnamon
- ⅛ t. nutmeg
- 3 T. sugar
- 1 t. vanilla
- ¼ t. salt
- powdered sugar or maple syrup
- Preheat oven to 450°F.
- In blender combine: 2 T. melted butter, milk powder, eggs, water, flour, cinnamon, nutmeg, vanilla, sugar and salt. Blend well.
- In an oven ready skillet (10-11” wide) combine 2 T. melted butter and apples. Saute apples until tender.
- Pour batter over the apples and transfer skillet into the oven.
- Bake for 15-20 minutes or until golden brown and puffed.
- Sprinkle with powdered sugar or drizzle with maple syrup.
- Cut into wedges and enjoy immediately.
