Blueberry Buttermilk Muffins
- 2 c. all purpose flour
- 1 T. baking powder
- ½ t. salt
- ½ t. cinnamon
- ¼ t. nutmeg
- 2 large eggs
- 1 c. buttermilk
- ¾ c. sugar + extra for topping
- ½ c. vegetable Oil
- 1-1/2 t. vanilla
- 1-3/4 c. @@brand@@ Frozen Blueberries
- Preheat oven to 400°F
- Grease a standard 12-cup muffin tin or line with paper cups.
- In a large bowl, combine flour, baking powder, salt, cinnamon and nutmeg.
- In a small bowl, mix well, eggs, buttermilk, sugar, oil and vanilla.
- Pour into the flour mixture and mix until moistened. Do not over mix.
- Fold in frozen blueberries.
- Fill muffin cups equally with batter. Sprinkle liberally with sugar.
- Bake for 15-20 minutes or until toothpick inserted into middle of muffin comes out clean. Serve warm.
