Berry Special Muffins
- 1-3/4 c. @@brand@@ Bran Flakes Cereal
- 1 c. lowfat buttermilk
- 1 egg beaten
- 2 T. @@brand@@ Vegetable Oil
- 1 c. @@brand@@ All-Purpose Flour
- ¾ C. @@brand@@ Sugar
- 1 T. @@brand@@ Baking Powder
- 1 t. @@brand@@ Ground Cinnamon
- 1 c. Fresh, frozen or canned blueberries, drained
- ¾ c. @@brand@@ Wheat Bran Flakes Cereal, crushed to ⅓ c.
- 3 T. packed @@brand@@ Brown Sugar
- 1 T. @@brand@@ Margarine or Butter, melted
- *1 tablespoon lemon juice or vinegar and enough milk to equal 1 cup may be supstituted for buttermilk.
- Preheat oven to 400°F.
- Grease or paper line 12 (2-1/2-inch) muffin cups.
- Combine 1¾ C. cereal, buttermilk, egg and oil in bowl. Let stand 5 minutes; stir to break up cereal.
- Combine flour, sugar, baking powder and cinnamon in separate bowl.
- Add cereal mixture all at once to flour mixture, stirring just until combined. (Batter will be thick.)
- Fold in blueberries.
- Divide evenly among prepared muffin cups.
- Combine ¾ C. cereal, brown sugar and margarine; mix well. Sprinkle over muffins.
- Bake 20 to 25 minutes or until tester inserted in center comes out clean.
